Vatha Kuzhambu


Ingredients:

Dry roast and powder:
Red chillies -10
Coriander - 1 tsp
Channa dla- 1 tbsp
Pepper-1/2 tsp
Fenugreek-1/2 tsp



Asafoetida- 1/2 tsp
Salt for taste
Jaggery - small piece
Turmeric powder- 1/2 tsp
Rice flour- 1 tbsp
Red chilli powder- 1 tsp

For tempering:
Asafoetida -1/2 tsp
Curry vadam/sundakkai vathal/manathakkali vathal-one fistful
Channa dal-1 tbsp
Chillies-4
Fenugreek-1/2 tsp
Urad dal-1 tsp
Mustard - 1 tsp

Procedure:
1.Soak tamarind in lukewarm water for 30 mins; put it in a blender and extract the pulp.
2.Dry roast and powder red chillies, coriander, channa dal,pepper and fenugreek.
3.Temper all the said ingredients except vadam/vathal. Add tamaraind pulp,turmeric powder, asafoetida,jaggery and red chilli powder. Mix rice flour in water and add it to the boiling mix.Leave it for 5 mins.
4.Now add the ground powder and allow it to boil well.
5.Now add salt and keep boiling. Temper the vadam/vathal in a teaspoon of oil and pour it in the mix. Yummy tasty vatha kuzhambu ready.

*Use gingelly/sesame oil preferably for all tempering. Adding curry leaves while tempering will add a good flavour.
*Dry roasted papad, rice with a tespoon of gingelly oil will be the best combination with vatha kuzhambu!

Mambazha Puliseri


This is a typical kerala recipe similar to Morkuzhambu made with ripe mango .

Ingredients:
Ripe Mango-1
Curd-3 tbsp
Salt as required
To grind and paste:
Shredded coconut - 2 tbsp
Red chillies- 4
Cumin seeds - 1 tsp
To Temper:
Oil - 2 tsp
Mustard - 1 tsp
Curry leaves-5
Fenugreek-1/2 tsp

Procedure:

1. Cut the ripe mango into 2" pieces.
2. Add oil in a pan and temper mustard,curry leaves and fenugreek .Immediately after adding fenugreek, pour a glass of water or else the fenugreek will burn.
3.Put the mango pieces, add turmeric and allow it to cook well in water.
4.Grind shredded coconut,red chillies and cumin seeds into a fine paste and mix it with curd.
5.When the mango is cooked, add this mixture and salt; allow it to foam.

*For any recipe add salt in the last few minutes. The predominant reasons being:1.The iodine in the salt gets evaporized if added earlier. 2. The vegetable takes more time to get cooked if salt is added in the beginnning.

Puliseri


This is a typical kerala dish which is similar to Morekuzhambu. Very easy to prepare!

Cooking time : 15 mins

Ingredients:

Grated coconut - 1 cup
Fenugreek,Mustard,oil & curry leaves for seasoning
Green chillies- 2
Dried red chilies- 3
Buttermilk-2 cups
Salt & turmeric powder as required

Procedure:

1.Grind coconut,green & red chillies into a fine paste
2. Mix this paste well with butter milk.
3. Heat oil in saute pan. Add mustard,fenugreek and curry leaves.When mustard starts popping, add turmeric powder.
4.Immediately pour buttermilk mixture and add salt. Retain it in heat until it foams.
